Honey Roasted Carrots
One pound of carrots, peeled and quartered
1/2 cup canola oil
1/2 cup of honey
1 teaspoon ground ginger
1/2 teaspoon cinammon
Preheat oven to 450°F. Combine oil, honey, ginger and cinammon. Toss carrots in honey mixture. Line baking sheet with foil. Spread carrots out on baking sheet and roast for 45 minutes, checking often.
Sometimes I squeeze a little lemon juice over these at the end. Eat over a half muffin. Mmm.
